My Favorite Food Some of my favorite foods that are traditional to my culture are antojitos mexicanos such as tlacoyos, sopes, huaraches, quesadillas, gorditas, tacos, tostadas and tamales. Also, other of my favorite dishes are Oaxacan foods such as mole oaxaqueno, chapulines, tlayudas con quesillo y chorizo, coloradito, frijol molido and tejate as well. Because antojitos mexicanos are a kind of appetizers that are popular all over Mexico I have eaten them in different places, and each place has its own style in preparing them. In the case of Oaxacan food I have eaten it since I was child, when we went to Oaxaca to visit my family. The ingredients to make antojitos mexicanos are similar. The base is made of masa dough and they can have a variety of filling such as beans, cheese, mushrooms, meat, chicken or pork. When they are ready to eat they are garnished with cilantro, onion and different types of spice salsas. For Oaxacan food the ingredients depend on the dish you want to prepare. For example, the mole is made of a variety of chiles, spices and condiments to make it taste spicy. The tlayudas con quesillo y chorizo are made of masa dough to form a big tortilla covered with shredded quesillo, cooked chorizo, onion and salsa. The chapulines are a kind of grasshopper that are cooked in hot water with epazote and fried in oil with garlic, onion and chile. Antojitos mexicanos are usually eaten at Mexican celebrations, such as Independence Day or Revolution Day. However, it is common to eat them on weekends as a breakfast or for brunch. Also, some people like to prepare them as an appetizer for parties. In the same way, Oaxacan food is eaten as part of the traditional food of people who are from the State of Oaxaca. Because my mom is delighted to keep her tradition alive, she always cooks the Oaxacan food by using a metate to grind the ingredients and prepare it according to the old style. Since I was child I remember my mom cooking tamales and preparing the ingredients to make mole and all the delicious food that she learned how to make from my grandmothers. Even though my mom is in Mexico and I cannot see her very often, I am grateful that she handed down the legacy of the love for the traditional Oaxacan food to me. These foods evoke memories from my childhood. They remind me of the time when we visited my grandmother and we would sit around the table to eat a hot delicious tlayuda with chapulines and frijol molido that she was making for us, and we would drink the refreshing tejate made of cacao that gave me the taste of joy and happiness.
