IT’S BETTER HOMEMADE I make my own Italian salad dressing mix (I found the recipe from an online recipe site) of dry herbs and seasonings, which I keep in a plastic container or a glass jar with a sealed lid. Long ago, I bought the “make your own” mix that came with a beautiful glass shaker/server with a pour spout lid. After I used it up, I realized that I could make my own mix. I save hundreds of dollars each year by mixing the dry ingredients, and then adding them to the healthy Extra Virgin Olive Oil and water and shaking it into a delicious dressing. You can use your own jar or container as long as you have a sealed lid or cap for it. You could also make other types of dressing in the same manner. -Trish H. in Dravosburg, PA

THE KITCHEN DIVA By Angela Shelf Medearis Green Tomatoes -The Fruit of the Vegetable Patch Every year, my small vegetable garden produces far more tomatoes than I can possibly use. As the season wanes, an abundance of green tomatoes forlornly hang photo by aschaeffer on the vine looking for enough sun to turn them into red jewels. I’ve begun searching for unique ways to use green tomatoes as a vegetable and as a fruit in my recipes. Scientifically, tomatoes are classified as a fruit, but since they don’t contain the sweet flavor of most fruits and are typically used in savory dishes, they’re legally classified as a vegetable. Tomatoes are low in calories and a good source of vitamins C, A and K. They are also a very good source of molybdenum, potassium, manganese, dietary fiber, chromium and vitamin B-1. In addition, tomatoes contain lycopene, which has antioxidant and cancer-preventing properties. My recipe for Green Tomato and Orange Relish uses green tomatoes like a pickled vegetable. It freezes well, and makes a delicious change from traditional cranberry relish for holiday meals. The spices and flavors of my Green Tomato Spice Cake act as a showcase for the tomato’s fruit-like qualities. Whether you decide to use your abundance of green tomatoes like a vegetable or a fruit, you can’t go wrong with these wonderful recipes! GREEN TOMATO AND ORANGE RELISH 4 medium green tomatoes 1 large purple or Vidalia onion 1 cup orange marmalade 2 cups dark brown sugar 1/2 cup apple cider vinegar 1/8 teaspoon red pepper flakes 1. Core the bottom of the green tomato and cut them into quarters. Peel the onion and cut it into quarters. Using a food processor, pulse the green tomato and onion 8 to 10 times, until the pieces become small (“pickle-relish” size). Do not puree. 2. Using a 4-quart, heavy-bottomed pot, put in all the ingredients at once. Cook over low heat for 15 minutes, stirring until blended and the sugar begins to dissolve. 3. Turn the heat to medium and cook for 30 to 40 minutes, stirring occasionally. The relish should be syrupy and slightly thick. If it does not seem to have thickened enough, cook the relish 10 minutes more. 4. Cool for 2 hours, and then put the relish in an air-tight container and refrigerate it. The relish can be refrigerated for two weeks. You also can place the cooled relish into plastic zip-lock storage bags and freeze for up to 6 months. Makes 5 cups of relish. GREEN TOMATO SPICE CAKE 1 box spice cake mix 1 1/4 cups water 1/3 cup vegetable oil 3 eggs 2 tablespoons light brown sugar 3 tablespoons all-purpose flour 1 teaspoon vanilla 1 cup pecans or walnuts, chopped 1 cup raisins (or dried cranberries, craisins or currants) 1 1/2 cups diced green tomatoes 1 large, peeled and diced, Granny Smith apple (about 3/4 to 1 cup) 3/4 cup powdered sugar 1 cup sweetened coconut, toasted, optional Whipped cream, optional 1. Preheat oven to 350 F. 2. In mixing bowl, lightly beat the water, vegetable oil, eggs, and brown sugar until combined, about 2 minutes. Stir in the spice cake mix and flour, and mix until smooth. Stir in the vanilla, pecans or walnuts, raisins, tomatoes and apples. Blend well. 3. Spoon the batter into greased and floured 9-by-13-inch baking pan. Bake for 45 to 55 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Loosen the cake from the sides of the pan with a knife or spatula. Cool for 30 minutes. 4. Using a fine-mesh strainer or a sifter, sprinkle the top with powdered sugar. When serving, top each slice with a tablespoon of coconut and/or whipped cream, if desired. PENNSYLVANIA STATE TECHNICAL ADVISORY COMMITTEE LOCAL WORK GROUP MEETING TO BE HELD AUGUST 10TH USDA’s Natural Resources Conservation Service (NRCS) has announced that a local work group meeting of the Pennsylvania State Technical Advisory Committee will be held on August 10, 2010 from 9:30am - 12:00pm at the Commissioners Conference Room, Cameron County Courthouse, Emporium, PA, 15834. The local work group is meeting to discuss the application and ranking system for the 2011 Farm Bill Programs. Asking $50. 814-544-7402. fb NEWS FROM NEW YORK STATE OFFICE OF PARKS & RECREATION Allegany State Park Master Plan Adopted Plan helps preserve wild character of the park Salamanca, NY (07/21/2010)(readMedia)-- The New York State Office of Parks, Recreation and Historic Preservation has adopted a master plan for Allegany State Park designed to protect the natural character of the largest wilderness in western New York and enhance the traditional recreational opportunities visitors pursue at the popular facility. “I am grateful to members of the community who took the time to attend the public meetings or offer comments on the plan,” State Parks Commissioner Carol Ash said. “Their participation in the process made this master plan better, more complete and more reflective of the community that supports Allegany State Park.” The master plan outlines OPRHP’s vision for potential capital improvements, operational enhancements and natural and cultural resource stewardship within Allegany State Park for the next ten to fifteen years. Factors such as the availability of funding, the need to invest in rehabilitation of existing park infrastructure, and other pressing needs in the entire state parks system will influence the sequence and timing of the improvements. In the remaining developed portions of the park - which include roads, beaches, snowmobile trails, and developed campgrounds - traditional activities and operations would continue. Other highlights of the plan include: •Expand options for camping by converting campsites to RV sites in the Red House area, setting aside new areas for backpacking and primitive camping, and adding new cabins; •Expand and improve the existing networks of hiking, mountain biking, snowmobiling trails, including creating a new 7.6 mile bikeway between Quaker Lake, Cain Hollow and Science Lake; •Improve boating opportunities by adding a new car top boat launch at the southern end of Quaker Lake, deepening the launch area at the existing Quaker Lake and developing a boat rental facility near the Quaker Lake beach area. State Parks has reinstated the master planning process throughout the park system, and Allegany State Park is among the first to complete a new master plan. Park master plans define a long-term, sustainable vision for parks by helping to identify best uses for a specific site, make the most of limited resources, and protect the environment. As author Hampton Sides points out, Ray was profoundly screwed up, but in a profoundly interesting way. What separates Sides’ book from others written about the King assassination is the unexpected details, such as his description of the flop house in Memphis where Ray set in motion his shocking murder. It is so vivid, one can almost see the grim, blistered walls and cracked linoleum floors, along with the heady smell of urine and Pine-Sol. After Ray checked into room 5-B and paid $8.50 for a week’s rent, he realized that the best view of the nearby Lorraine Motel where the King party was registered was from a grimy hallway bathroom. As King left room 306 at the Lorraine and paused on the balcony, Ray took his shot. It was a murder that would forever change the course of American history. The irony is that Ray might have gotten away with it if he hadn’t been so fastidious when it came to his laundry. A tiny identifying laundry tag stamped into the inseam of a pair of undershorts found near the scene of the King murder led to his eventual capture. Meticulously researched and elegantly written, “Hellbound on His Trail” is so good on so many levels that it will leave readers breathless.

Here are a few books that can alleviate the summer doldrums: “Head to Tail Wellness: Western Veterinary Medicine Meets Eastern Wisdom” by Stacy Fuchino, V.M.D. Alternative medicine has gotten sidewise looks in the past from vets and owners alike. It’s fine to go to an acupuncturist yourself, but what good does it do for a dog or cat? He presents case studies from his own practice of pets with chronic illnesses that improved following treatment with a combination of Western medical treatment and Eastern practices. “Cat-echisms: Fundamentals of Feline Faith” by Ellis Weiner & Barbara Davilman This is a fine example of the pet-persona genre, which many cat lovers probably will find endearing. “Cat-echisms,” as the title suggests, bases its style on the Catholic method of outlining fundamental beliefs and principles through a question-and-answer series. This is a small book, short enough to read in one sitting or just to leave on your coffee table. “Stay” by Allie Larkin Finally, a bit of fiction to chew on. “Stay” takes a fur-laden twist when our heroine, Savannah, impulsively buys a puppy off the Internet. I spoke to several experts, and they seem to agree that your table is probably worth "several thousand dollars." To find out exactly how much, the time has come to hire a good appraiser. CALCULATE REBATE’S TOTAL COST I love to take advantage of rebates that give me the item for free, but there’s one small catch that shoppers would be wise to consider. Sometimes, the offered item is much more expensive than cheaper brands, and considering that sales tax is usually not included in the rebate, that can bump up the final cost considerably. For example, awhile back, a local store offered a free-after-rebate deal on an expensive brand of shampoo, which cost $9.99. Here in California, tax is more than 8%, so that “free” shampoo cost me over 80 cents, which isn’t much savings over the cheaper brands I normally purchase in the $1 price range. I ended up purchasing it anyway, but I did so with my eyes open, choosing to enjoy a high-end product at a bargain brand price rather than deluding myself into thinking I was getting it for free. Just keep in mind the total, final cost of a rebated item, including the tax and postage to mail it in (if it’s not done online), and compare it to similar, less-expensive products to see if it’s truly the bargain it appears to be. -Diva

I didn't pay much attention until later in the day when I saw three hovering in that area, and one crawling under the sill. There may be a nest in that spot. How can I safely get rid of a yellow-jacket nest, if there is one? -- Julie in Kennesaw, Ga. A: I'm not fond of yellow jackets or wasps, so unless the nest is small and easy to remove -like a small wasp's nest on a gutter -- I defer to a professional. Your guess that the yellow jackets have a nest under or behind that windowsill is probably correct. However, to locate it and deal with it, the siding next to the sill may need to be removed. If your home uses vinyl siding panels, this task is usually somewhat easy and can be done without damaging the siding. But if there are yellow jackets under there -- and the nest could harbor many more than you've seen so far -- there's a risk of getting stung. So first, contact a pest-control professional who specializes in removing wasp, bee or yellowjacket nests. He or she may be able to look under the sill and siding without removing anything. Get a quote up front on how much it will cost initially to look at the infestation, and get the removal estimate in writing before the company proceeds with the work. While investigating a network’s subversive scheme to control society using Blipverts (1-second commercials), Carter’s consciousness is uploaded to a computer, creating the manic, rogue element known as Max Headroom. “Max Headroom” was a show ahead of its time and was no match in the ratings against powerhouses like “Dallas” and “Miami Vice,” so it was canceled after a few episodes of its second season. *** WORTH A RENTAL “Date Night” (PG-13) -- Steve Carell and Tina Fey star in this uneven farce about a New Jersey

couple who hope to add a little spark to their ho-hum marriage by having a date night in the city, but wind up being mistaken for another couple who are blackmailing a crooked politician. So, what could’ve been a hilarious film about a couple dealing with all the frustrations that go with trying to get around New York (a la “The Out-of-Towners”), we get a ridiculous, unbelievable chase movie that makes absolutely no sense. What saves “Date Night” are the performances by Fey and Carell. Their chemistry and comedic timing elevate a poor script and make the film watchable. I w o u l d n ’ t recommend this DVD as something you’d want in your collection, but it’s worth a rental. DOLLARS AND SENSE By David Uffington Hiring Contractors for Remodeling If you have a remodeling project in mind, late summer is a good time to line up your contractors. Construction crews are coming to the end of their busy season and looking for work to keep themselves going over the cooler months, especially the winter. Before you begin: Take written bids from at least three contractors. Be detailed in your specifications when it comes to the type of wood you want, the model and color of cabinets, the number of coats of a specific paint, etc. Ask for references of any contractors you interview, of course, and call them. Ask if the project was completed on time and at the promised cost. But don’t stop there. While it’s still warm and crews are out, drive around your area and make note of the addresses of homes where work is being done, as well as the company name and phone number of any work vehicles in the yard. When the projects are complete, approach the homeowners and ask whether they were satisfied with the work. They might even show you around to see the completed project. Make sure any contract you write is for a fixed price that includes materials and labor. That way you know the bottom line. If you sign a standard contract, read it carefully. Remember: If it’s not in writing, it doesn’t exist. Don’t agree to any clause that can change the deadline, price or materials on your job. While it’s tempting to save money by acting as your own general contractor, you may be happier in the long run if you hire a residential general contractor with the expertise to order supplies and hire and schedule sub-contractors. Remember that while the general contractor will be responsible for a lot of things, you can’t step completely out of the process. With liability insurance and workers’ comp, for example, all crews who step foot on your property need to produce a copy of their certificate before they begin work. When new materials show up, be there when it’s being unloaded and look for damaged or missing material. (As an aside, Gordon has won five times at Infineon Raceway, the track closest to his birthplace.) Gordon's most recent Indy victory occurred in 2004. In the five races since then, though, Jimmie Johnson has won three times and Tony Stewart twice. Forty-eight races have passed since Gordon's last victory anywhere. He won at Texas Motor Speedway on April 5, 2009. Still, a winless Gordon is better than most drivers who have won multiple races this year ... literally. Gordon, 38, ranks second in the

Sprint Cup point standings, trailing only Kevin Harvick, and has more top-five finishes (10) than any other driver. "Our team's been consistently running up front," said Gordon. "We just haven't had the car to win or all the pieces as a team to get ourselves into victory lane. "At times we've had the car. For whatever reasons -- blame it on me, blame it on incidents, I don't like to point fingers -- but we haven't gotten to victory lane. We think we've got some things up our sleeve for Indy, but I'm sure that's what a lot of guys out there are thinking." Only five drivers -- Richard Petty, David Pearson, Bobby Allison, Darrell Waltrip and Cale Yarbrough -- have ever won more races at NASCAR's highest level than Gordon. Three more victories would put him ahead of everyone except Petty and Pearson. But it's been "82 and holding" ever since the 2009 Texas victory. Some have speculated that the end of Gordon's career is near. He disputes this. "Man, I do (feel old) when I get out of that race car and everything aches," he said, "but no, I mean, I'm still enjoying the sport very, very much. I feel like I'm way more comfortable with where I'm at in the sport today. That's fun. I like all the years of experience that now I get to benefit from. "The only thing I'd change right now is getting some of those wins back. It's tough. It's very competitive. We know we've got to pick up the pace."

Transfer potato slices to jelly-roll pan; brush with olive oil and sprinkle with salt and pepper to season both sides. Place potato slices on hot grill grate. If those nerves respond to the current and keep the bladder closed, then a small unit is implanted under the skin for a permanent solution to this problem. One such device is called the InterStim.
