You will often find recipes today that call for some form of alcohol that is nee ded to enhance the flavor of certain dishes. This presents a problem for those w ho follow Islamic law which states that alcohol is forbidden, even when used in small amounts in cooking. Are recipes that call for alcohol off limits then? Not at all! There are many non-alcoholic ingredients out there that can be substitu ted for any given alcohol, ingredients that are fairly common and ones you proba bly already have on hand. Some alcohols have multiple items that can be substituted for them, so when doin g this you can experiment and find which substitution works best for you. Also, most substitutions can be used using the same measurement of alcohol that is cal led for. Here is a list of common alcohols called for in recipes, and the non-alcoholic i ngredients that can be used in substitution of them. Amaretto: Amaretto is common in many dishes, from breads and desserts, to vegeta bles and main dishes. The perfect substitution for amaretto is almond extract. A s almond extract has a much stronger flavor, only use about ¼ of the amount of ama retto called for. Apple Brandy: It is the apple taste that is needed here, so apple juice, apple c ider, unsweetened apple juice concentrate, even apple butter can be used in subs titution. Bourbon: a teaspoon or two of non-alcoholic vanilla extract can be used to repla ce bourbon in a recipe. Brandy: Brandy is another alcohol commonly found in recipes, and there are sever al different fruit juices that can be used to replace it. Water is a common subs titution but, depending on the recipe, cherry syrup (from canned cherries), whit e grape juice, and apple juice can be used. Champagne: Any sparkling fruit juice will do here, such as apple, grape or cranb erry juices. Ginger ale also works well if you prefer not to have a fruity taste . Coffee Liqueur: Espresso is a great substitution when a recipe calls for coffee liqueur. Coffee syrup can also be used, as well as non-alcoholic coffee extract. Cognac: Pear, peach, or apricot juice works well when needed a substitute for co gnac in a recipe. Crème de menthe: To substitute for crème de menthe, spearmint extract is a good choi ce, or spearmint oil, which should be diluted with a small amount of water. Ouzo: To substitute for ouzo in a recipe use anise Italian soda syrup. Peach Brandy: To substitute for peach brandy in a recipe, use the syrup from can ned peaches. Make sure peaches are canned in heavy syrup. Peach preserves can al so be used. Peppermint Schnapps: Mint leaves work well when used in substitution of peppermi nt schnapps. Non-alcoholic peppermint extract can also be used. Port Wine: grape juice, preferably concord, can be used in equal amounts. Orange or apple juice can also be used for a lighter taste. Red Wine: Cranberry juice, grape juice, tomato juice, even beef or vegetable bro th can be used to enhance a recipe calling for red wine.

Rum: Vanilla extract or non-alcoholic rum can be used. Pineapple juice, and appl e juice are also good substitutions. Sherry: Apple, pineapple, and orange juices all make good sherry substitutions. Peach syrup can also be used. ========================================================= Cooking with alcohol is simply not an option. Cherry Liqueur or Cherry BrandySyrup from a can of cherries in heavy syru p, or cherry Italian soda Syria or cherry preserves. Claretnon-alcoholic wine, d iluted grape juice or cherry cider syrup. Coffee LiqueurTo replace 2 tablespoons of liqueur, use 1/2 to 1 teaspoon of chocolate extract mixed with 1 teaspoon of instant coffee, which has been mixed in 2 tablespoons of water. Can also substi tute expresso, non-alcoholic coffee extract or coffee syrup. CognacApricot, peac h or pear juice. CointreauTo replace 2 tablespoons of liqueur, use 2 tablespoons of orange juice concentrate or 2 tablespoons of orange juice with 1/2 teaspoon of orange extract. Crème de cacaoPowdered white chocolate combined with water, or non-alcoholic vanilla extract and powdered sugar. Crème de cassisBlack currant Ita lian soda syrup or black currant jam. Crème de menthenon-alcoholic mint extract, m int Italian soda syrup, spearmint extract, or spearmint oil with a little water added. If green color is needed, add a drop of green food coloring. CuracaoTo re place 2 tablespoons of liqueur, use 2 tablespoons of orange juice concentrate or 2 tablespoons of orange juice with 1/2 teaspoon of orange extract. FramboiseRas pberry juice or raspberry syrup. FrangelicoHazelnut or almond extract. GallianoL icorice extract. GewurztraminerWhite grape juice combined with lemon juice. SchnappsTo replace 2 tablespoons of schnapps, add 1 teaspoon of a correspondi ng flavored extract. SherryApple juice, orange juice, pineapple juice, or non-al coholic vanilla extract. Southern ComfortPeach flavored nectar combined with a s mall amount of cider vinegar. Sparkling WineGinger ale, sparkling apple cider, s parkling cranberry juice, or sparkling white grape juice. Use equal amounts of liquid as called for in the recipe. Alcohol Substitutions in Cooking How To Substitute AlcoholCooking with alcohol i s simply not an option. The following is a general list of non-alcoholic substit utes that can be used. Chose the option that best matches the flavor of the dish you are making. Amaretto - Non-Alcoholic almond extract. (Substitute 1/4 to 1/2 teaspoon almond extract for 2 tablespoons Amaretto.) Anisette Anise Italian soda syrup or fennel. Also use the herbs anise or fennel. Beer Chicken broth, beef broth, mushroom broth, white grape juice, ginger ale. Bourbon 1 1/2 to 2 teaspoons of non-alcoholic vanilla extract. Brandy Water, white grape juice, apple cider or apple juice, diluted peach or ap ricot syrups. (Substitute equal amounts of liquid.) Champagne Ginger ale, sparkling apple cider, sparkling cranberry juice, or spark ling white grape juice. Coffee Liqueur To replace 2 tablespoons of liqueur, use 1/2 to 1 teaspoon of cho colate extract mixed with 1 teaspoon of instant coffee, which has been mixed in 2 tablespoons of water. Can also substitute expresso, non-alcoholic coffee extra ct or coffee syrup. Cognac Juice from peaches, apricots, or pears. Cointreau Orange juice or frozen orange juice concentrate. Creme de menthe Spearmint extract or oil of spearmint diluted with a little wate r or grapefruit juice. Grand Marnier or Orange-Flavored Liqueur - Unsweetened orange juice concentrate or orange juice. (Substitute 2 tablespoons unsweetened orange juice concentrate or 2 tablespoons orange juice and 1/2 teaspoon orange extract for 2 tablespoons Grand Marnier.) Kahlua - Coffee or chocolate-flavored liqueur. (Substitute 1/2 to 1 teaspoon cho colate extract or substitute 1/2 to 1 teaspoon instant coffee in 2 tablespoons w ater for 2 tablespoons Kahlua.) Kirsch Syrup or juices from cherries, raspberries, boysenberries, currants, or c ider. (Substitute equal amounts of liquid.) Peppermint Schnapps Non-alcoholic mint or peppermint extract, mint Italian soda syrup, or mint leaves. Port Wine, Sweet Sherry, or Fruit-Flavored Liqueur) Orange juice or apple juice. (Substitute equal amount of liquid.) Rum (light or dark) Water, white grape juice, pineapple juice, apple juice or ap ple cider, or syrup flavored with almond extract. (Substitute equal amounts of l iquid.) Sake Rice vinegar. Sherry or Bourbon Orange or pineapple juices, peach syrup, or non-alcoholic vani

Tequila Cactus juice or nectar. Triple Sec Orange juice concentrate, orange juice, orange zest or orange marmala de. Vermouth, Dry White grape juice, white wine vinegar, or non-alcoholic white wine . Vermouth, Sweet Apple juice, grape juice, balsamic vinegar, non-alcoholic sweet wine, or water with lemon juice. Whiskey If a small amount is called for, it can be eliminated. Vodka White grape juice or apple cider combined with lime juice or use plain wat er in place of the vodka. Wines: Gewurztraminer White grape juice combined with lemon juice. Grappa Grape juice. Port Wine Concord grape juice with some lime zest added, cranberry juice with so me lemon juice added, or grape juice concentrate. Substitute orange juice or app le juice for lighter ports Red Wine Red grape juice, cranberry juice, chicken broth, beef broth, vegetable broth, clam juice, fruit juices, flavored vinegar. (Substitute equal amount of l iquid.) White Wine Water, chicken broth, vegetable broth, white grape juice, ginger ale, white grape juice. Sweet White Wine White grape juice plus 1 tablespoons Karo corn syrup.
