1kg Raw or White Sugar (raw sugar prefered) 1/4 tea spoon Citic Acid 700ml Water. METHOD: In a small pot add all ingredients and slowly bring to the boil stirring constan tly. Then reduce the heat to a simmer, and simmer for 20 mins. Allow to cool and pour into a suitable container with a lid. (1.25L coke bottle) and then place in the fridge until required. This is good for about 4 months if refrigerated. Alternative: 4 cups granulated sugar 1 1/2 cups water 1/4 teaspoon citric acid or juice of one lemon. Combine all ingredients in a heavy 4-quart pan. Bring to a boil, stirring consta ntly to dissolve sugar. Lower heat and simmer for 1/2 hour, stirring occasionall y. Store in tightly covered container.
