Louisiana Food By: Charlie Dugas
Foodq One Word, Four Letters A million and one aspirations Never Ending Ideas With never ending recipe books

With always moving kitchens There is always a way As long as there is a will, Which arrives without fail.

The batter never stops being beat The grease never cools The gumbo is always ready, As long as you please. The crawfish always come around, Then leave for the next year But their always back for another round. The oysters are ready to open The crabs are ready boil, As well as the crawfish. The people don’t leave the room for one second, Unless their coming back with more.

The Cajuns always are hungry, But not just for crawfish

There is more… Much, much more: Etouffée, Gumbo, Crabs, Shrimp, Gator, Froglegs, Jambalaya, Pecan Pie, Boudin, And the Mac-daddy of them all Turducken.

Never artificial, Always official when it is ready. Home grown and caught at home Ready on the go, and ready to go. Hours of drudging over smelly pots and loud pans But for the ultimate feast, at least of the week, But that will only last for minutes at a time.

It’s not good without Tony’s And not spicy enough unless your nose is running. Shells crackling and dip disappearing Stomachs filling and noses running Trash cans fill with card board and plastic While the dishes dirty full of grease. Never ending Joy, That we in Louisiana call Food.
