LUNCH is Fairbanks’ newest gastronomical experience:

Full Time Chef/Food Manager
An exciting opportunity to grow with a new restaurant from the ground level, and create a new menu, in a great downtown Fairbanks location.

DUTIES & RESPONSIBILITIES
Chef/Head Cook/Food Manager Help create menu items. Develop and prepare menu items according to LUNCH dietary principles. Plan, coordinate, and price menu. Supervise and execute production of menu. Determine time and sequence of cooking operations to meet meal serving deadlines. Participate in personnel actions, train employees, and determine work schedules. Supervise ordering, purchasing, receiving, and inventory. Supervise sanitation and cleaning. Implement clean-as-you-go policy throughout kitchen. Maintain food costs, safe handling, preparation standards, and other food related records. Supervise work of LUNCH employees and other kitchen personnel engaged in, preparing, cooking, displaying, and serving food. Observe quality of food service and give instructions for maintenance of high standards. Review inventory and requisitions, and purchase food supplies as required; make direct special purchases. Complete Production Order Records. Estimate cost of food consumed, compile cost control records and include justification for overages.

EDUCATION AND EXPERIENCE
• 2 years experience, or successful completion of a culinary program. • Valid driver's license. • Passion for food and cooking is a must. • An understanding of back of house operations is strongly recommended. • Demonstrated excellence in leadership. • Strong written and verbal communication skills. • Adept knowledge of food. • Knowledge of labor laws and health codes.
