Peach Cobbler
2 ½ cups sliced peaches, canned, drained
2 tsp apricot brandy
2 tsp unsalted butter
2 tsp vanilla extract
1 tsp cinnamon
½ cup sugar
2 tsp lemon juice
¼ tsp nutmeg
1 TBSP cornstarch
2 tsp water
½ pkg. pie dough, or ready-made pie shell
Preheat oven to 350.
In a 2 qt. saucepan, add peaches, brandy, butter, vanilla, cinnamon, sugar, lemon juice,
and nutmeg. Bring to a boil. Add cornstarch mixed with water and cook until mixture
thickens. Place peach mixture in a deep dish pie plate. Top with pie dough, crimping
edges to seal in filling.
Bake for 45 min, or until crust is golden brown.
