PREPARAT RATION ION MET METHOD HOD PREPA •

Shell and de-vein prawns prawns and wash wash them well. Even if you you get it de-veined from market check   whether it is de-veined or or not. (If not make a slight cut on the back of the the prawns and pull the the string like thing. It will come off easily without without any fuss.)

 Wash and soak basmati basmati rice in water for about 15 minutes. Marinate prawns with with the following ingredients ingredients and set aside for atleast 15 minutes.

(For Marinating Prawns) 1. Cu Curd rd - 1 spo spoon on 2. Lem Lemon on juic juicee - 1 spoo spoon n 3. Salt Salt - 1/ 1/4 4 sp spoo oon n 4. Red chi chilli lli pow powder der - ¼ spo spoon on 5. Turmeric Turmeric powder powder - 1/2 spoon spoon (Make a paste of all the above ingredients ingredients and apply on the prawns prawns and set aside) •

Meanwhile do other preparations preparations like, slice onions, wash and pluck the mint leaves and coriander from the the stem, squeeze lemon and extract juice from it and and set this all aside.



Now place a wok / pan on flame and add 1 spoon spoon of ghee to it and after it heats up add the marinated prawns prawns and saute well on low flame for a minute or until the prawns turns slightly   whitish. Set this this aside.



Take a pressure cooker and place its pan on flame, then add 4 spoons spoons of ghee.



Now add fennel seeds (sombu), cinnamon stick, cardamom cardamom pods (opened), cloves, bay leaf, star anise all at the same time and saute on low flame just just for a few seconds.



Then add sliced onions and and saute well until it turns translucent. translucent.



Now add the ginger garlic paste and and saute well, add some salt and saute, so that the paste paste does not stick to the pan.



Now add mint leaves leaves and coriander coriander leaves and saute saute until the leaves shrink shrink well.

Then add red chilli powder, coriander powder and saute saute well. Now add the sauteed prawns prawns (along with any extra masala masala remaining remaining after sauteing) and saute for a minute.

Drain water from the soaked basmati basmati rice and add it to the cooker and stir twice, see that you don't stir too much, if so the rice will break. Just stir gently using a big ladle. ladle.



Pour 1½ cups of of water and stir stir gently. Check for for salt and add if needed.



Close the cooker with with its lid and and switch the the flame to high high mode.



 Wait until the steam steam oozes out out of the nozzle nozzle then place the whistle/regulato whistle/regulator. r.



Switch the flame to low mode mode and cook perfectly perfectly for 7 minutes and and remove from flame.



Set aside undisturbed undisturbed until the pressure drops drops or releases on its own. Then open the lid and serve!!
