EDITOR'S LETTER
A

n absolutely wonderful day was had by
all who attended the St

Boat Race in July. Well
done to all who took part,
especially to the Pro Build
team who came first, second place to the Fast way
to fitness boys and third
place to the Fire Brigade,
money is still coming in,
they are hoping to raise in excess of £24,000 from the
event, so please keep on donating to this amazing charity. Pam Sharp is already booking the teams for next
years boat race, for more info, contact Pam at St Davids
Hospice ASAP as there are only limited spaces available.

S

ummer is here and WOW, what superb weather we
are enjoying!! A lot of us are looking to dine out and
I would like to give praise where praise is due. If you are
looking for a great value lunch menu, then the Lilly bar
and Grill located at the top of Mostyn street in Llandudno
and also on the West Shore. If Italian is what you crave
then top of my list has to be Carlo's in Craig Y Don, and
for a tasty alternative to the traditional sunday roast the
Bengal Dynasty in Llandudno offers a sunday buffet, all
you can eat for £8.95 adults and £4.95 children.

N

ow that you have eaten all of that food and I am sure
a few of you will also be partaking in the odd BBQ,
you might want to lose some of those unwanted lbs you
have put on. I can recomend the Forever Clean 9 body
cleanse, a great foundation to go on to better over all
fitness and wellbeing, see page 42. I have lost 3 stone in
weight since January and 6 inches from my waist and feel
so much better.

I

hope you all have a wonderful summer, enjoy the Yes
mag and look forward to writing you in the October
edition.

Beef & Sweet Potato Curry
Serves 4

Ready in 50 minutes

This tasty beef curry has
a wonderful mildly spiced
coconut sauce and is perfect
to serve when entertaining
friends and family. Serve
with natural yogurt and a
cooling shredded carrot,
tomato and
cucumber
salad.

Place the onion, garlic, ginger, pepper and
curry paste in a food processor or blender with
1tbsp water and process until finely minced.

Ingredients:
• 1 onion, peeled and
chopped
• 2 garlic cloves, peeled
and chopped
• 2cm piece fresh root
ginger, peeled and
chopped
• 1 red pepper, deseeded
and finely chopped
• 2 tsp Thai green curry
paste
• 2 tbsp sunflower oil
• 450g thick sirloin steaks,
trimmed of fat and cubed
• 400ml can reduced fat
coconut milk
• 1 large sweet potato,
peeled and cut into
chunks
• 100g green beans,
trimmed
• 4 tbsp fresh chopped
coriander
• Boiled rice, to serve

Heat the oil in a large deep frying pan, add
the paste and fry over a medium heat for 4-5
minutes, stirring all the time until fragrant.
Add the cubed steak and cook, stirring, over
a high heat for 2-3 minutes until the meat is
no longer pink. Pour in the coconut milk and
100ml water and bring to the boil.
Add the sweet potato and reduce the heat to
a very gentle simmer. Cook for 20 minutes,
stirring occasionally. Add the beans and cook
for a further 5-10 minutes until the beef and
sweet potato are tender.
Stir in the chopped coriander and season
to taste with salt and freshly ground black
pepper. Serve in warmed bowls with the boiled
rice.

TIP

For a hotter curry add one finely chopped red
chilli pepper to the paste. Replace the beef
with skinned chicken thigh fillets if preferred.

Cake and
Bake
Dutch
Apple Pie
The buttery pastry for this deep dish pie is made with
a mix of self-raising and plain flours which gives it a
soft and cake-like texture. If you prefer a crisper pastry
use all plain flour. Choose crisp sweet dessert apples
such as Cox’s Orange Pippins or Discovery.

Ingredients:
• 200g plain flour
• 150g self raising flour
• 175 g unsalted butter, diced
• 150g caster sugar plus 1 tbsp for
sprinkling
• 2 medium eggs, beaten
• 400g dessert apples, peeled, cored
and sliced
• 75g raisins
• 75g light soft brown sugar
• 1 tbsp corn flour
• 1 tsp ground cinnamon
• 2 tbsp milk
• Whipped cream, to serve

1. To make the pastry, sift the plain and self- raising
flours into a large bowl and add the diced butter.
Using your fingertips, rub the butter into the flour
to make fine breadcrumbs. Stir in the sugar and
beaten eggs and mix to a soft dough. Knead very
lightly until smooth then wrap in cling film and
chill in the fridge for 1 hour.
2. Preheat the oven to 190°C/170°C fan/gas 5.
Place a baking sheet in the oven to pre-heat.
3. Roll out two-thirds of the pastry on a lightly
floured surface and use to line the base of a 23
cm round loose-based fluted flan tin.

TIP

4. Toss the apple slices in a bowl with the raisins,
brown sugar, cornflour and cinnamon then layer
in the pastry case, pressing down gently. Roll out
the remaining pastry and cut into strips. Arrange
in a lattice pattern over the apples. Dab the
edges of the strips with a little water and press
firmly to seal.

Serves 8

5. Brush the top of the pie with milk and sprinkle
over caster sugar. Place the flan case on the
preheated baking sheet and bake for 35-40
minutes until the pastry is crisp and golden.
Serve warm or cold with whipped cream.

Replace the apples with sliced pears
or a mixture of summer berries such
as blackberries, raspberries and
blueberries.

My Beach Life
by Mike Shields of the

Restore Our Beach Pressure Group

Orme, (one of the proudest moments of my life). Ted and
John let me take the Helm of his boat the "Welsh Maid"
on the Pleasure Trips and Fishing Trips on many occasion,
steering that magnificent boat around the Great Orme's
Head on a Sunny day with a calm Sea was one of the best
feelings in the world.
In those days Llandudno Beach had
approx. 10 to 15 Steps leading down from
the Promenade to a beautiful Golden
Sandy Beach with a few rocks scattered
around the Tidal levels and it was always
packed with holidaymakers from Easter
till the end of September sunbathing
on the Beach, sitting in Deckchairs or
relaxing on the Steps. Llandudno was a
thriving Holiday destination and the Boats
did a roaring trade.

I

was born in Llandudno North Wales in October 1950.
My Family lived literally a Stone's throw from the
Beach (little did I know at the time how important that
word would become to me later in life). From when I was
about 8 or 9 years old in the 50's and through to the 60's
I spent most of my time on the Beach playing with my
Friends, the family Dog and Kids on Holiday that I just met
on Llandudno's Sandy Beach. In those days it was safe to
let your kids play on the beach unattended. (Also there
were plenty of people that worked on the beach that my
Mum & Dad knew that were looking out for me). When I
reached Ten or Eleven I helped out with the Donkeys that
used to take kids for a ride along the Beach, I was never
happiest seeing a young child with a big
grin from ear to ear on his/her face sitting
on top of a Donkey while I led it along the
beach.

At eighteen I got a job working on the
Llandudno Pier Crew, repairing the
Decking, Railings, etc. in the winter and
patrolling the Pier in the summer. Also in
the summer Season we (The Crew) were
responsible for bringing the Isle of Man
Boats alongside the Pier Head for the
Tourists to board for day trips to Douglas.
I met my Wife Sue whilst working on the Pier, she worked
for the Pier Manager George Rodgers in the offices inside
the Pavilion and we're still happily married to this day.
As you can imagine, Llandudno Beach means an awful
lot to me and I got quite emotional that day when I saw
what they were doing to it... I suppose what I'm trying
to say is, My Life, from the tender age of 8 until approx.
22 years old was spent on or around Llandudno Beach,
I basically grew up on it and I'm not happy about what's
happening to it...

My Dad Andy Shields was always helping
Ted yr Ogof and his son John yr Ogof with
the Pleasure Boats that took Tourists on
Trips around the Great Orme's Head and
Fishing Trips a couple of miles out in the
Bay so I begged him to get me a job with
them. They took me on and that was to
be the start of six amazing years of my
life working on the Boats in Llandudno
Bay. Eventually I applied for a Boatman's
Licence, sat an exam about Llandudno
Bay, passed it, and received a Badge and
Certificate entitling me to Pilot Motor
Boats in the Bay and around the Great

Fast Forward to 2014, 5.05pm Monday the 24th of
March to be exact... I was driving home from work along
Llandudno Sea front when I noticed several JCB's on the
Beach. I parked my Car and walked onto the Promenade
to see what was happening. What I witnessed in that
short time on the Prom that day was to bring about
something that has turned into a full blown Campaign
to Restore Llandudno beach to its former Glory. As
I drove home I wondered who could do this to the
beautiful beach I spent most of my childhood on. I did
some Internet searching and discovered that the Conwy
County Borough Council was "Replenishing" the beach
with Stones to bring it back to the 2002 guidelines for Sea
Defence...

The next evening I was updating my Photography page on
Facebook and noticed upon the "Create a Page" button
and I thought "Why not, it may attract a few Likes and
if anyone was to agree with me about what I thought
was the destruction of our Beach, maybe someone in
authority might just sit up and listen". That it seems
was an understatement, in just 16 days the Page had
received over
3,000 likes..!
Locals, Visitors,
ex Pats, even
people from
as far away
as Vietnam,
Australia,
America,
and other
worldly places
who have
never visited
Llandudno but
agree that what
is being done to
our Beach is...
Just Wrong...!

Conwy County Borough Council stated that they were
only ‘reinstating’ the stones to 2002 levels. They stated
that they would rather be criticised of the stones than
Llandudno flooding. The point is, the sea has never
flooded Llandudno since the early 1900s and not since
the small sea defence wall was created after that so why
is our beach being destroyed? The town exists because of
tourism; everybody is affected by tourism in some way.
The hundreds of Hotels and Guest Houses rely on the
tourists visiting the town. Our beach is an integral part of
a holiday in Llandudno; it is ingrained in our heritage and
is also very special to the townsfolk. It is our main asset.
You don’t destroy your main asset on a whim.
The Restore Our Beach Pressure Group is
campaigning to restore Llandudno’s sandy
beach by adopting a more aesthetically
pleasing, tourist friendly Sea Defence.
We want CCBC to disclose all the relevant
reports and models the rock solution was
based on. We want to see minutes of
meetings and see what was discussed in
Council. We want to know who supported
this, why full consultation has not been
carried out as it was with the Colwyn Bay
beach plan. Our County Councillors have
been almost silent on this. Not one has
made a constructive comment. Not one
has come out against the work despite
the Llandudno Town Council giving us
their full support and setting up a Beach
Working Party. This, despite having
thousands of people from around the
world backing us and asking questions,
the silence from CCBC is deafening. Is there more to these
decisions? Why wasn’t public consultation carried out?
What other alternatives where looked at and dismissed?
Where is all the evidence that this is the best Sea Defence
option for Llandudno…www.restoreourbeach.co.uk www.facebook.com/restoreourbeach www.twitter.com/restoreourbeach

Choosing & Using Paint
By Katherine Sorrell
areas such as hallways or
playrooms. For kitchens and
bathrooms, consider specialist
paints that are scrubbable and
resistant to both moisture and
steam.

Indoor woodwork and
metal

This trend-setting wall is painted in
Stiffkey Blue® No.281, £36 for 2.5l
Estate® Emulsion, Farrow & Ball,
01202 876141; farrow-ball.com

A quick lick of paint on the
walls and woodwork will
brighten and beautify any
home, inside and out. Our
interiors expert Katherine
Sorrell is on hand to help
you choose the best type
of paint.

Indoor walls and ceilings

Easy to apply and available in
thousands of different colours,
emulsion is ideal for walls and
ceilings. Emulsion is always
water-based, which means it
is quick-drying, low-odour and
cleans off the brush easily.
Choose from a flat matt,
standard matt or silk (softly
shiny) finish. Generally, the
higher the sheen level, the
easier the surface will be to
keep clean, but the more any
imperfections will show up.
Water-based eggshell has a
low shine and provides a more
durable, wipeable surface –
useful for walls in hard-working
16

Unless you have chosen an
all-in-one, specially formulated
paint, first use an appropriate
primer to seal bare surfaces
then apply a couple of layers of
undercoat on top of the primer
to give ‘body’ to the surface.
Remember that undercoat
comes in a dark or light colour,
depending on the shade of
top coat to be used. For your
final coat, gloss is available in
a variety of finishes, from low
sheen to high gloss. It is always
better to apply two thin coats of
gloss than one thick one, the
exception being when using
non-drip gloss (sometimes
called one-coat gloss), which
is best used for pale interior
woodwork. For central heating
pipes and radiators, buy a
heat-resistant paint which will
withstand high temperatures
without discolouring.
Solvent-based paints are
gradually being phased out,
so these days the majority of
wood and metal paints are
water-based and brushes can
be cleaned with hot water and
detergent.

Outdoors

Masonry paints are designed
for outdoor wall surfaces made
from brick, stone, concrete,
pebbledash and render. They
come in smooth or textured
finishes. For older properties,
limewash is a traditional finish
that has a powdery matt
surface and a lovely depth of
colour. Use it for interior and
exterior limestone, lime render

and plaster, and even wattle
and daub. For woodwork,
use an exterior-grade primer,
undercoat and gloss, just like
indoors. For fences, sheds and
garden furniture, choose from a
range of specialist treatments,
clear or coloured, which are
designed to prolong the life of
the timber. Restore old railings
and other metalwork with
exterior-quality metal paint such
as Hammerite.

Specialist paints

There is a specialist paint for
virtually every need, whether
you want to repaint your kitchen
cupboard doors, paint timber,
concrete or vinyl flooring, or
revamp the tiles in your shower.
Look out for fire-retardant and
anti-burglar paint, blackboard
paint, damp-inhibiting paint,
suede-effect and even
magnetic paint.

What about natural
paints?
Natural paints are waterbased and made either
with very much lower levels
of petro-chemicals than
conventional paints, or with
plant-based ingredients.
They are ‘breathable’, which
is good for older houses, as
well as kind to the planet and
to your health. You can buy
natural paints ready-mixed,
in a wide range of colours,
and even have them colourmatched to your desired
shade. They’re just the same
to apply as ordinary paints,
with similar coverage, though
paints made with natural oils
tend to take longer to dry.

Hobbies
The Buzz of Helping Our Natural Environment
are several
different strains
of honey bee,
some of which
are more docile
– and therefore
easier to
manage – than
others.

The buzzing of a honeybee
is a familiar, timeless sound
that we immediately associate
with summer, but sadly 20 bee
species are already extinct
and time may be running out
for some of the remaining 267
species in the UK.
This is because changes
in farming practices over
the years have led to the
disappearance of many wild
flowers from their natural
habitat and this environmental
emergency may be one of the
reasons why beekeeping has
enjoyed a revival.

While the UK has its share of
commercial bee farms,
most beekeepers
are dedicated
amateurs. There
are three main
types of bee –
bumblebees,
honey bees and
solitary bees, but
it is the honey bee
that beekeepers
commonly look
after in an ‘apiary’
(the name for a
place where bees
are kept). There

If you are
thinking of
starting up
as a beekeeper the first
consideration should be the
location of the hive. Do you
have a garden or piece of land
nearby where you can easily
feed and maintain your bees?
Can you place it in a location
away from wind and in full or
partial sun? Is the presence of
the hive likely to disturb your
neighbours? Even if the bees
pose no direct harm to others,
you should bear in mind that
their presence may still cause
anxiety to people living nearby.
Beekeeping is a form of
livestock management and
looking after an apiary can
at times be demanding and
heavy work. It’s advisable to
consider taking a recognised
course such as those offered
by the British Beekeepers’
Association (http://www.bbka.
org.uk). The Association has
branches all over the country,
offering introductory sessions
designed to tell you everything
you need to know about
setting up an apiary as well as
hands-on contact with a hive.
A hive is a miracle of
organisation, where bees take
on different roles to support

their community. Worker
bees forage for food, build the
honey comb, feed the larvae,
keep the nest clean and
defend it from predators, while
queen bees mate with drones,
producing up to 1,000 eggs
per day to form new colonies.
It’s important to feel confident
about handling bees before
you proceed to set up an
apiary, as the initial costs
can be quite high. The
essential purchase is a hive,
plus various components
and accessories. You’ll need
to start out with a five or six
frame nucleus and gradually
expand your colony as you
become more experienced.

You should always purchase
bees from a reputable bee
breeder: it’s better to buy
queens that have been bred
within the UK as imported
queens may carry diseases. If
you join your local beekeeping
association you may be able
to buy your bees locally from a
fellow keeper.

What you choose to do with
the honey from your hive is,
of course, up to you. One
hive can produce up to 60lb
(27kg) in a good season,
however an average hive
will offer a surplus of around
25lb (11kg). There are other
products – such as beeswax
and royal jelly – that can also
be sold, which goes to show
that beekeeping is not only a
great hobby: it can be a great
business, too!

Short Story
Windfalls
“Ramsey!”, Mr Dreffle called
over the garden fence. “My
wife didn’t get a wink of sleep
last night”. Ramsey continued
digging up his potatoes; he
knew all too well what this was
about.
The old apple tree that stood
on the border between
their properties had been
dropping fruit on the Dreffles’
conservatory all night.
It had been a bumper crop.
Ramsey was looking forward
to getting his press out. He
reckoned he’d have enough
cider to see him through until
New Year.

“That’s a nice looking axe”.
Ramsey said, “Is it for trimming
your toe nails with?”

Since they’d moved in the
Dreffles had installed one after
another of what they called
home improvements. The back
garden had been dug up and
decked; all kinds of fountains
and tacky ornaments had been
installed, including a seven
foot mock-Victorian wrought
iron lamppost, and of course
the ugly conservatory. It was
as though the Dreffles had
declared war on all greenery.
“Something must be done
Ramsey; we can’t go on like
this”. Dreffle’s face was flushed.
“Those apples are going to
damage our conservatory one
of these days”.
“This old tree has been around
long before your conservatory,
and it will be around long after
it’s taken down”. Ramsey
patted the tree trunk. She was
a good old girl, produced lovely
fruit, and asked for very little in
return.
Dreffle’s wife, Sherrie, opened
the back door. Ramsey might

have known she
was behind this.
She was the sort
of person who
filled her hanging
baskets with
plastic flowers
so that they
wouldn’t drip on
her decking. Sherrie clutched
a metal object which flashed in
the sunlight. Ramsey didn’t like
the look of this.

“He’s chopping the tree down
once and for all”, Sherrie said
placing the weapon in her
husband’s sweaty hands. “I’ve
warned you about that tree
Ramsey, it’s a menace”.

The leaves of the apple tree
rustled in the breeze, and then,
as though to sign its own death
warrant, another apple plopped
down onto the conservatory
roof with a sickening thump.
“You’ll never chop it down with
that little thing”, Ramsey said,
eyeing up the axe.
“It’s drop forged carbon steel”,
Dreffle boasted, “top of the
range”.
“Carbon steel eh?”. Ramsey
adjusted his cap, “Is that the
stuff even metal can’t blunt?”
“That’s what they said in the
shop”. Dreffle, practised a
swing in the air.

“You’ve been had”, Ramsey
chuckled, “I reckon metal would
blunt that blade in a heartbeat”.
“Not this blade”, Dreffle said
crossly.

“prove it”.

“Don’t you dare!” Sherrie
snapped, as Dreffle swung the
axe at the wrought iron lamp
post. It vibrated dully like a
broken bell.
“Not blunted it all”, Dreffle
grinned, running his thumb
along the warm blade.

A sharp crack of splintering
wood rippled through the
planks of the decking.

The Dreffles leapt back as
the lamppost began to topple,
pulling up the planks as it fell,
almost elegantly, towards the
conservatory.

The sound of breaking
glass reminded Ramsey
of a spontaneous round of
applause. Shards flew into the
air like diamonds, and then
the whole structure crumpled
in on itself under the weight
of the lamppost. Broken glass
and twisted metal were all that
remained of the conservatory.
When the air had settled, and
the Dreffles looked as though
they might be able to speak
again, the tree dropped one
more apple which landed on
top of the wreckage like a
cherry on a cake.

Ramsey smiled to himself, and
picked up his spade.
“The tree stays”, he said, and
went back to his digging.

“Go on then”, smiled Ramsey,

that make the
backbone of
many a Chinese
stir-fry... and
the great thing
is that oriental
vegetables
do well from
late summer
sowings, so it’s
off to the garden
centre (not the
takeaway) you
go!

We all know that homecooked food is better
for us than a stream of
takeaways, but then we
all deserve a little selfindulgence from time to
time. So why not save
yourself the guilt (and some
cash!) and grow your own
Chinese takeaway right
here in your own garden?
Don’t worry – I haven’t
turned cookery writer, and
I’m not about to tell you
how to make spring rolls
or chicken chow mein.
But there’s absolutely no
reason why you shouldn’t
grow some of those
tremendously tasty and
crazily crunchy vegetables
24

Bean sprouts are
so easy to grow
you could almost
do it with your
eyes shut. The
common types
are sprouted
mung-beans,
and you can
either buy
packets of seed
or do as I do and buy a
small packet of the beans
themselves from your local
health food store. Just soak
the seeds or beans for
about half an hour, rinse
them thoroughly and put
a couple of tablespoons
in a large glass jar, add
a bit of water, and cover
the mouth of the jar with a
bit of muslin (or a section
from a clean but old pair of
tights), secured well with a
rubber band. Put the jar in
a cool, dark cupboard and,
once a day, drain the old
water and add fresh. Before
you know it the beans will
start sprouting sprouts and
you’ve got yourself the
beginnings of a stir-fry.

oriental
vegetables do
well from late
summer sowings
Mizuna has got to be one
of the most attractive leafy
vegetables you can grow.
Its green leaves appear
soon after sowing the seed
in a pot or in open ground,
and they add a great spicy
flavour to your stir-fry – but
don’t forget to save a few
for adding zing to salads
and sandwiches.
And where would your
Chinese meal be without
pak-choi, that fast-growing
Oriental veg that brings a
superbly succulent crunch
to every mouthful? It’s
another easy vegetable to
grow late in the summer:
just sow the seeds in a
well-forked soil, water, and
wait. Thin out as per the
instructions of the seed
packet (remembering that
the thinnings are great to
eat too), then just pinch off
the roots and pop the plants
into the wok. Pak-choi also
grows well in a container of
multi-purpose compost.
Garlic is another essential
ingredient. It’s not really
the right time of year to
plant garlic, but for an
unexpected little extra take
a few spare cloves and pot
them in trays of compost.
Keep the compost slightly
moist and in a week or

two the cloves will start to
sprout. What you’re after
here aren’t the sprouts,
though, but the bright
green foliage which adds
a definitely garlicy flavour
to stir-fries and a touch of
colour as well.
Radishes add heat as
well as crunch, and
there are some lovely
oriental varieties such as
Mantanhong, which is a
British-bred Chinese variety
with a sweet and superbly
crunchy bright red-to-pink
inner flesh and spherical
white roots – great for
colour and texture and
with a sweet almost nutty
flavour. Sow in open ground
or pots from now until early
September for cropping in a
few weeks’ time.
Spring onions are another

classic stir-fry component.
Sow yourself some seed
promptly and you won’t
get a fully mature crop for
harvesting this year unless
you’re extremely lucky;
but what you will get is a
super-young onion that will
add both colour and intense
flavour to the contents of
your wok.
And finally, to add a meaty
texture (and some protein)
to your ultimate
home-grown
vegetable stirfry, why not
grow your own
mushrooms?
Kits for growing
both oyster and
field mushrooms
are available in
many garden
centres or by

mail order. It’s not always
easy to get right, I know,
but the challenge is
definitely worth it when you
have exotic mushrooms
growing in your cellar,
garden frame, greenhouse,
or shed.

Carcassonne
Dream
Citadel
By Solange Hando

T

his year marks the
200th anniversary of
Viollet-le-Duc, a brilliant
architect born in Paris who
devoted his life to restoring
churches and castles across
the country. Most celebrated
of all is the medieval citadel
of Carcassonne rebuilt, with a
few flights of fancy, from ruins
and rubble. Today, on a hilltop
framed by vineyards in south
west France, Carcassonne
rises like a dream above the
river Aude, a fairy tale citadel
which simply takes your breath
away.

Once a strategic crossroad
on the plain of Languedoc,
the citadel played a major role
in a long and often troubled
history but fell into disrepair
when in 1659 the Treaty of the
Pyrenees pushed the Spanish
border 200km to the south.
Saved in the 19th century by
a local scholar who enlisted
the help of Viollet-le-Duc,
Carcassonne was for 35 years
the largest construction site
in Europe, turning a ‘heap of
funeral ashes’ into an ‘iconic
landmark in the national
landscape’. Now on the World
Heritage list, it is the third most
visited site in France.
Some might say that
Carcassonne is too good to
be true, a frozen image of
28

the Middle-Ages draped in
flamboyant romanticism but
the restoration altered only
10% of the site and no one
can deny that seen from the
Old Bridge, the largest walled
town in Europe is simply
magical. With its mighty gates
sending shivers down your
spine, moats, drawbridge and
double line of ramparts bristling
with 52 towers, dungeons and
machicoulis, it showcases the
golden age of 13th century
military architecture, recreated
with a little imagination.

At the windswept Narbonne
gate, beribboned horsedrawn carriages are ready
to take visitors along the
lists while a maze of winding
streets beckons beyond the
drawbridge. In summer, crowds
make their way along the
cobbled lanes where shops sell
toy swords and other souvenirs
alongside local specialities
and Occitan craft. There are
restaurants and wine cellars
and right at the top, the Count’s
castle. With its walls enhanced
by nine towers, including the
highest in the Cité, this is a
fortress within a fortress and
includes a permanent exhibition
about the restoration. A few
steps away, the basilica was
the first building tackled by
Viollet-le-Duc who managed

to preserve some elements
of Romanesque and Gothic
styles. The old cloister is now
an outdoor theatre where
cultural events are held, as well
as knights tournaments and
jousting contests during the
summer Medieval Fair.
In the sun or in the shade,
it’s good to stroll along the
medieval streets where the
last inhabitants live behind
half-closed shutters. But the
highlight of the Cité is walking
around the lists where 3kms
of ramparts let you enjoy a
360° panorama. To the north is
the Black Mountains, the last
foothills of the Massif Central,
and to the south, in clear
weather, the snowy summits of
the Pyrenees. The ‘new town’
is at your feet, a checkerboard
of narrow streets, punctuated
with towers and spires between
the Canal du Midi and the river
Aude.
That’s where you want to be
on the evening of July 14th,
on the river bank facing the
citadel. Every year, on Bastille
Day, a massive explosion of
fireworks seemingly sets the
fortress ablaze, culminating in
a grand finale with over 1000
shots, a most befitting homage
to Viollet-le-Duc.

Going to University?
Here’s How to
Manage Your Money
By Ann Haldon
www.cornerstonewebcontent.com

I

f you are off to university in
September, your head will be
full of worries and excitement
about living independently,
studying, and how to manage
life in a new city. It might be a
little overwhelming at times, but
with forethought and planning
you can organise your money
and get to grips with the
financial side of life.
Managing money is often
the biggest concern for new
undergraduates, but the trick
is to know your figures, set a
basic budget where you can,
and stick to it. One of the first
decisions to make though, is
which student bank account to
open.

Student bank accounts

Most of the top UK banks
operate specific accounts for
undergraduates. In general,
they offer 24-hour online
banking, mobile apps, and
interest-free overdrafts subject
to eligibility.
NatWest Uniproof Account

• Free arranged overdraft
facility of up to £500 in the
first term, £750 in the second,
and £1000 in the final term

• Free Tastecard membership
(currently worth £79.99) if you
sign up for online banking
and paperless statements.
32

This entitles you to 50%
off meals in a range of UK
restaurants.
HSBC Student Bank Account
• Free overdraft facility of £500
on signing up
• Up to £3000 overdraft limit
subject to eligibility

• Credit interest of 1.5% AER/
gross on the first £1000 in
your account

• Student credit card with a
limit of up to £500, subject to
status
• Commission-free foreign
currency on amounts
between £100 and £2500

Santander Student Account
• Free Santander 16-25
Railcard, valid for four years

• Interest-free overdraft of up to
£1500 per year if £500 is paid
into your account at the start
of each term
• Credit interest of 1% AER/
gross on balances of up to
£500

In terms of added extras,
Santander’s free Railcard is
probably the most useful for
students, especially if you are
a long way from home. It saves
a third on the cost of most rail
travel in England, Scotland
and Wales, and is valid for four
years.

Budgeting and moneysaving tips
Budgeting is simple once
you get into a routine. It just
needs commitment, and an
awareness of how much you
are spending. The first thing
to do is calculate the total of
your maintenance loan and any
grants, wages if you intend to
work, and any money from your
parents.

Then make a list of regular
bills, such as food, electricity,
insurance and books. Also
factor in birthday and Christmas
expenses, and the cost of
running a car if you have
one. The money left over is
disposable income, but you
need to make sure you don’t
overspend.
There are lots of things you
can do to save money in this
respect:
• Take a packed lunch or eat in
at lunchtime
• Rather than buying expensive
take-away drinks, use a
thermal travel mug for taking
coffee/tea to lectures
• Apply for an NUS student
discount card – this can get
you 10%-15% off prices in a
wide range of shops
• Choose ‘basic’ supermarket
brands to keep your food bills
down

To Advertise in YES MAG please call Richard 01492 541627 or 07598 234066

The main objective is to live
within your means rather than
splurging all your money at
the start of term. Divide the
maintenance loan over three
months to budget for living
costs, and you are halfway
there.

Knowing the difference
between ‘good debt’ and
‘bad debt’

Not all debt is created equal,
and although you get a good
rate on student loans, it’s not
always the case in other areas.
Interest-free bank overdrafts
are the next best way to
borrow, but after that, debt can
quickly spiral out of control if
you are not careful.

Knowing how to use credit
cards effectively is an important
part of managing your money at
university, as the temptation to
spend without thinking can be
overwhelming at times.

The important thing to note is
that only paying the minimum
amount off a credit card each
month allows the interest
to build up, and makes it
increasingly difficult to pay
off what was originally a
manageable amount.

could be hit with huge rates of
interest.
Of course, there are ways
to supplement your income.
Taking a part-time or seasonal
job whilst at university can
provide a better lifestyle, but
you need to weigh this up
against reduced study time.
Just check you are on the
correct tax code, as overpaying
tax adds up to a significant
amount over a year.

This point is well-illustrated
by the Money Saving Expert
website,

“If you borrowed £3,000
aged 21, and only made
the minimum credit card
repayments, you’d be
50 before it cleared.”

Paying for higher education is
an investment, and remains
a popular choice even
with the recent
increase in
tuition fees.
You don’t need to
be cash-strapped
at university
or debt-ridden
when you leave –
just make sure it’s
memorable for all the
right reasons.

Paying off the
total amount
owed at the end
of each billing
period gives
you interest-free
credit for a very
limited time, but
go beyond this
timescale and you

You do the business.

Accounts, tax returns, inland
revenue queries - leave it all

Finding the Right Hair Style for Your Face Shape
By Helen Taylor

choose a
hairstyle they
like, without
thinking if it’s
actually right for
them.

Credit:
Lisa Shepherd

How many times
have you chosen a
new hairstyle based
on what will suit your
face shape? Probably
never. That’s because
most women don’t
even know what
their face shape is,
let alone take it into
consideration when
opting for a new do.
Instead, they turn to
magazines filled with
pictures of the latest hair
trends and photos of their
favourite celebrities and

38

result.

Of course it’s
a good idea to
take inspiration
from these
sources - after
all it’s key to
staying up-todate - but it is
important to ask
yourself if the
style you pick
out will actually
best suit you,
because if it
doesn’t you’ll
end up with
an unflattering

Get it right though, and
you’ll be amazed, because
the right style will make you
look instantly younger and
prettier.
So that you can make an
informed decision next time
you book in at the salon,
we’ve compiled our guide to
finding your face shape and
choosing a style that will
flatter it the most.

How to Find Your Face
Shape

Firstly, pull all you hair back
from your face and tie it up
- remembering to clip back

your fringe too.
Then stand in front of a
large mirror and trace the
outline of your face with
lipstick. Don’t include your
ears. Follow the curve of
your hairline and accurately
trace the edges of your
cheeks and chin.
Next, step back from the
mirror and take a look at
the shape you’ve drawn. Is
the shape you’ve created
longer than it is wide? Or is
it as wide as it is long?

Here’s what it all
means:

If your face is longer than it
is wide and your forehead is
just slightly wider than your
chin, then you have an oval
shaped face.
But, if the shape you’ve
traced resembles a circle
and your cheekbones make
up the widest part of your
face, then you’ve got a
round shaped face.
However, if your forehead,
cheeks and jaw
are all fairly
even in size
and the shape
you’ve drawn
looks like
a long
rectangle
with
curved
corners then
you’ve got an

oblong shaped face.
If none of the above sound
like you, and you’ve drawn
an outline that shows a
long, pointed jaw line, broad
forehead and small chin
you’ve got a heart shaped
face.
Or maybe your shape is
nearly as long as it is wide
with straight sides, a broad
forehead and a defined jaw,
with minimal curves. That
means you’ve got a square
shaped face.

Here’s a list of styles
that will suit your newly
discovered face shape
best:
Oval
This is the most versatile
face shape, you’ll look great
with long, short, straight or

curly hair. Try
out a variety of
looks and rest
assured that
you’ll pull them
off.
Round
Choose long,
straight styles
with layers that
are cut at the
jaw line and
that extend down to the
ends. A graduated bob
that is cut onto the face can
work well - as long as it is
cut shorter at the back of
the head.
Oblong
Fringes - both straight and
side swept - can work really
well on long faces. If you’re
in to short styles choose
an angular bob with short

layers that hug the chin.
Heart
Long hair with soft, loose
curls looks great on this
shape face. Choose a blunt,
full fringe for a flattering
result.
Square
Opt for lengthy, poker
straight hair with long layers
or choose an extended,
textured bob.

ARGI+
Look Good, Feel Great, Be Healthy!

Increased Energy
Recreational, endurance and professional
sportsmen and women all have one thing in
common: they are exposed to physical stresses
and strains. In order to help the body cope in these
situations, we seek external support. Nutrients help
us feel in better shape and have more energy and
endurance.
Essential Amino Acids
The amino acids that compose proteins are the
building blocks of every cell in our body. They have
a great influence on the way the body functions
and are important components in muscle mass.
The human body requires over 20 differengt amino
acids, many of which cannot be produced by the
body itself. Some are nevertheless essential and
must be obtained from outside the body, such
as in the foods that we eat, to provide nutrition.
L-Arginine, amongst others, belongs to the group
of essential amino acids. L-Arginine can be found
naturally, including in nuts, poultry and soya beans.
L-Arginine increases feelings of wellbeing in many
40

situations and has been praised for its effectiveness
by professional sportsmen and women with high
muscle mass.
Valuable Vitamins
Vitamins are essential to life and assist our body's
functions. Vitamin C is especially important in
strengthening the body's defences. Vitamins B6,
B12 and folic acid also support the body through
stressful times. Vitamin K is ideal in supporting
the circulation and arterial health of active people.
Immediately after physical activity, a simple
carbohydrate such as D-ribose can assist in energy
regeneration.
Secondary Plant Compounds
Although plant constituents, so-called secondary
plant compounds, only occur in very small quantities
as bioactive substances in plants, they nevertheless
have invaluable properties: they not only give plants
their colour, but help maintain the body's natural
defences. There are over 30,000 secondary plant
compounds in all, some 10,000 of which we take in
with our food. Examples of these are polyphenois,
which are present in large quantities in grapes and
berries. Red wine extracts help to maintain healthy
cholesterol levels. Pomegranate has a particularly
high proportion of secondary plant compounds. It
is also rich in potassium, calcium, magnesium and
vitamin C.
L-Arginine
L-Arginine is an amino acid that can be beneficial to
overall health. Our bodies convert L-Arginine into
nitric oxide, a molecule that helps blood vessels
relax and open wide for greater blood flow. Greater
blood flow supports many important functions in our
body, such as maintaining healthy blood pressure
and overall cardiovascular health.
ARGI+
Forever has a unique product, which contains this
essential amino acid L-Arginine plus secondary
plant compounds and specially selected vitamins, to
provide the daily strength your body needs. ARGI+
helps oxygen and minerals flow efficiently through
the body and has further benefits that make this

a heart or kidney condition, pregnant or
taking medication should consult their GP
prior to taking ARGI+
For further information please contact:

Dr Murad won the 1998 Nobel Prize with
co-recipients Robert F. Furchgott and Louis J.
Ignarro for the discovery that nitric oxide can be
used to signal blood vessels to relax and widen, thus
assisting in the lowering of blood pressure.

Your Guide to
Heart Health
By Alison Runham
www.alison.runham.co.uk

T

he British Heart Foundation
estimates that around 82,000
people in England suffer a heart
attack annually; one in three die
before reaching hospital and
around half of the survivors are
under 75.
So it’s vital we look after
our hearts – and that we can
recognise the symptoms of a
heart attack.
Keeping Your Heart Healthy
Diet
Keep it balanced. Avoid high
sugar and high fat foods, and
eat plenty of fruit, vegetables
and several sources of protein
(meat, eggs, dairy products, fish,
legumes and pulses). Choose
wholegrain carbohydrates
(pasta, bread, rice).
Alcohol
Alcohol can damage heart
muscle and cause abnormal
rhythms. Stick to the
recommended maximum safe
limits: men, 3-4 units per day (21
per week); women 2 – 3 per day
(14 per week). 1 unit = 1 small
bottle of (4%) alcopop; half a pint
of beer/lager/cider (4%); a single
measure of spirits (40%).
2 units = 1 standard 175ml glass
of wine/champagne (12%); 1 pint
4% beer/lager/cider; a double
measure of spirits.
Smoking
Smokers are twice as likely to
have heart attacks, so quit or at
least cut down. Ask your doctor
for advice or order The British
Heart Foundation’s guide, ‘Time
to Quit’, for free at
http://bit.ly/1ltpgIc.

46

Exercise
Ideally we should do 150
minutes of exercise weekly that
raises our heart rate keeping our
cardiovascular system healthy.
If you don’t exercise, start small
and find an exercise you enjoy.
Symptoms Of Heart Attacks
Heart attacks don’t always
present with sudden intense
chest pain. Sometimes
symptoms can be mild and
build gradually, particularly
in diabetics, or come and go.
Although chest pain is the
most common symptom, more
than a third of sufferers don’t
experience it.
• Chest pain (often a squeezing
sensation or fullness, which
may linger or come and go)
• Dizziness or light-headedness
• Sweating (normally a cold
sweat)
• Shortness of breath
• Nausea or vomiting
• Pain elsewhere (usually
jaw, neck, back, left arm or
abdomen)
• Heartburn
• Coughing or wheezing
• Severe fatigue
• Overwhelming anxiety
Heart Attack Symptoms In
Women
Women may experience all
these symptoms or none, but
they’re more likely to experience
the less common symptoms:
pain in other areas (particularly
the upper back), shortness of
breath, sweating, nausea or
vomiting, dizziness and unusual

tiredness (sometimes for days).
Without chest pain, they may
not realise they’re having a heart
attack.
What To Do When A Heart
Attack Occurs
Don’t panic, but do act swiftly.
If in doubt, always call 999.
If you’re an angina sufferer,
the NHS recommend taking
your glyceryl trinitrate (‘GTN’)
tablets or spray and repeating
the dose 5 minutes later, then
5 minutes later again, if there’s
no improvement. Phone 999
immediately if the pain doesn’t
improve.
The NHS recommends that
people who suspect they’re
having a heart attack should
chew and swallow one aspirin
(300mg) tablet, providing
they’re not aspirin-allergic, to
thin the blood and maintain
blood supply to the heart.
If you’re the patient:
Move as little as necessary and
call an ambulance. Take an
aspirin if it’s nearby – but don’t
exert yourself to reach it.
If you’re attending the patient:
Phone the ambulance
immediately. If the patient isn’t
aspirin-allergic, give them an
aspirin – providing it’s nearby.
Keeping your heart healthy is
one of the most important things
you can do – but ensuring you
can recognise and deal with a
heart attack is vital too.

MOTORING

Porsche
Macan
By James Baggott, editor of
CarDealerMagazine.co.uk

P

orsche is set to bolster
its position as market
leader in the premium SUV
sector with the launch of this,
its new mid-sized Macan. An
impressive range of engines,
stylish exterior design and the
German marque’s typically
upmarket interiors all feature,
but will this suave sports utility
vehicle carve out a market for
itself quite like the Cayenne?
We find out...
What is it?
Porsche will tell you that the
new Macan is not a downsized,
shrunken version of the
Cayenne SUV. They’ll gladly
regale you with tales that the
Macan’s shape takes great
inspiration from the 911 and
the 918 hypercar. They’ll even
let slip that during the Macan’s
testing regime, the 911 was
used as a benchmark for the
results. The fact is, however, the
new Macan is based – loosely,
it must be said – on the Audi Q5
and is a new entrant into the
hugely profitable and popular
compact SUV sector. Judging
by the larger Cayenne’s
sales history, it will sell by the
bucketload.
What’s under the bonnet?
There’s the option of a 335bhp
3.0-litre, twin-turbocharged
petrol or a 254bhp 3.0-litre
twin-turbo diesel. What with
its 143mph top speed and
combined fuel consumption of
more than 44mpg, the latter is

48

predicted to take 60 per cent of
UK sales. The range is topped
off with the 394bhp, 3.6-litre
twin-turbocharged Turbo – it’s
ludicrously fast, but doesn’t
put the lower powered V6s
to shame as they are equally
punchy.
What’s the spec like?
For now at least, the range is
simple. Both the petrol and
diesel Macan S cost £43,300
and come well specified with
an electric tailgate, part leather/
part alcantara upholstery,
dual-zone climate control, MP3
connectivity and 18-inch alloys.
The Turbo at £59,300 adds
19-inch wheels with red brake
calipers, sat nav, Bose sound
system, leather upholstery
with electric front seats and
alcantara roof lining. There is of
course a healthy options list for
those with more to spend. All
come with Porsche’s excellent
seven-speed PDK automatic
transmission.
What’s it like to drive?
All that marketing hype about
this being the first sports car
compact SUV is true – it’s a
fine-handling thing. The steering
is as crisp as it probably could
be and thanks to 90 per cent of
the car’s power being pushed
to fat tyres at the rear, it’s
well-balanced, too. Even when
Sport and Sport + modes are
prodded, the ride is firm but
never unbearable. The Turbo
is deeply impressive and

will reach 60mph in just 4.6
seconds.
The Verdict
Just over a decade ago,
Porsche caused quite some
controversy producing its
first ever SUV. The Cayenne
wasn’t what you’d call pretty
but it successfully married true
Porsche handling in a more
user-friendly and everyday
package. The new Macan takes
that to even greater levels.
With ample seating for five and
loading space of 1,500 litres
when the seats are folded,
it’s a practical proposition. Its
smaller dimensions make it far
more agile on the road and it
genuinely feels sporty to drive –
think of an upscaled, four-wheel
drive Boxster and you wouldn’t
be too far wrong. It’s even
rather good looking in our eyes.
In our opinion, you’re looking at
Stuttgart’s new UK best-seller

Around Britain
5 Fossils & Dinosaurs
1. Ewenny, Vale of Glamorgan - In 1947, a German palaeontologist named
WG Kühne discovered a series of tiny teeth and bone fragments in a quarry
near Ewenny in Glamorgan. The 200-million-year-old remains belonged to a
creature he named Morganucodon (meaning ‘Glamorgan tooth’), which has
since been identified as one of the earliest of all known mammals.
2. Lyme Regis - A great many species of dinosaur have been uncovered in fossil beds on the Dorset
coast, but perhaps most famous of all were the remains of a 9ft-long Plesiosaur (a carnivorous
marine dinosaur with flippers and an elongated neck) discovered by fossil collector Mary Anning as
early as 1823.
3. Oxford - Unearthed in a brick pit near Oxford in 1871, Eustreptospondylus (meaning ‘well-curved
vertebra’) was one of the earliest of all dinosaurs discovered in Britain. It was carnivorous, stood
around 6ft tall, and lived during the mid-Jurassic period around 160 million years ago.
4. Sutton - In the mid-1800s, the remains of a Hyracotherium – an herbivorous dog-like mammal that
lived around 50 million years ago – was discovered at a site in Sutton on the Suffolk coast. Despite
standing less than 1ft tall, Hyracotherium was in fact an ancestor of the modern horse.
5. Walliswood, Surrey - The first specimen of a Baryonyx – a 30ft, 2-tonne carnivorous dinosaur that
lived around 125 million years ago – was discovered in a clay pit near Walliswood in 1983. The find
was all the more remarkable as it seems to have proven that Baryonyx was piscivorous, making it
one of only a handful of land-dwelling dinosaurs believed to have fed on fish.

Beer of the Month

Summer’s lease, as the bard remarked, hath all too short a stay; and as it’s now September
the lease hath definitely expired because this, officially, is the first month of autumn. The days
are shortening, the kids are back at school or college or university, and the holiday in the sun
is a distant memory. So, what beers to choose?
Well, generally unsettled as September may be it can still throw some surprises at you.
The highest temperature ever recorded was 35.9C (in 1906, admittedly); but Septembers
have been getting warmer and drier since the beginning of the century, so there’s still every
chance of enjoying a final barbie before the covers go on. And to accompany the last burnt
bangers and frazzled franks of the year, you want a beer that’s still summery but perhaps a
bit more assertive, a bit more characterful, than the hot-weather lagers you’ve been guzzling
poolside in Marbella or wherever. In short, you want to get your chops round some hops.
First up is Citra at 4.6% abv from Oakham Ales of Peterborough. It’s actually named after the
hop variety it’s brewed with which, being American, is big on aroma but not too long on finish. It’s
honey-coloured, with all sorts of tropical fruits exploding on the nose – lychee, mango, even a
little citrus. The mouthfeel is rich and creamy but with enough petillance to add a bit of bite and
although there’s plenty of hop bitterness on the palate it doesn’t stay around all that long.
Jaipur IPA from Thornbridge Brewery of Bakewell, Derbyshire, is a much tougher customer
at 5.9% abv. It’s a modern reconstruction of the 19th-century India Pale Ales that used to be
hopped to the eyeballs to help them survive the long sea voyage to the east, but it’s pretty
malty too. The aroma is a balance between sharp lemon and lime from the hops and grassy,
grainy malt. The mouthfeel is rich, almost like cream soda, while the palate mingles hay,
cream, and intense hop bitterness. The finish is very long and bitter with a slight oiliness.
Definitely one to savour.
